pumpkin soup

the pumpkin season is one of my favourites. i love autumn and i love in season vegetables among which the pumpkin. last day i made some delicious pumpkin soup and i would like to share the recipe with you :)

to taste this lovely and delicate soup you will need:

-500 g of fresh pumpkin
-3 table spoons of sour cream (as usual i recommend the creme fraiche)
-1 medium onion
-1 table spoon of olive oil
-salt and peper
-1 tea spoon of corn flour
-fresh parsley
cut the onion into small pieces. in a big pot heat the olive oil and brown the onion. cut the pumpkin in medium size pieces and add to the pot. keep on a small fire without adding water for 5 minutes. add 1 liter of water and cover the pot. make the soup boil for about 20 minutes or until the pumpkin is already very soft. take away from fire and whisk with the electric blender. add the cream, salt and peper and mix it all very well. put on the fire once again and add the corn flour. let it boil for a couple of minutes in order to make the soup become more dense. serve with fresh parsley.

i hope you will like it. it's perfect for the october dinner to warm the already cool evenings.

This looks very good. I will have to try it. Here in Norway I have never seen a pumpkin patch and I have actually NEVER tried a recipe with pumpkin. But I did see pumpkins (imported!) in the store the other day... so I'm off to try something new!
