just a different kind of muffins


it's hard to find somebody who doesn't like muffins. actually i don't belive there is somebody who really doesn't like them :) i love muffins! i love them for breakfast (the sweet version) and love them for lunch (in salty version). i simply love them anytime! this recipe (from one of my favourites cook books "cake dolci e salati" of ilona chovancova, pubblished in italy by guido tommasi editore) is simply the best! moreover it is a muffin version of my favourite tart (see the recipe here)!

e' difficile trovare qualcuno a cui non piacciono i muffin. in realta' io non credo che esista davvero qualcuno a cui non piacciono :) io amo i muffins! li amo per la colazione (in versione dolce) e per il pranzo (in versione salata). li amo a ogni ora! questa ricetta (da uno di miei libri di cucina preferiti "cake dolci e salati" di ilona chovancova, pubblicato in italia da guido tommasi editore) e' semplicemente la migliore! per lo piu' e' la versione muffin della mia torta salata preferita (vedete qui la ricetta).

trudno jest znalezc kogos kto nie lubi muffinow. tak naprawde to nie wierze, ze istnieje ktos kto ich nie lubi :) ja uwielbiam muffiny! uwielbiam je na sniadanie (w wersji slodkiej) i na obiad (w wersji slonej). uwielbiam je o kazdej godzinie! ten przepis (z jednej z moich ulubionych ksiazek kucharskich "cake dolci e salati" ilony chovancovej opublikowanej we wloszech przez guido tommasi editore) jest poprostu najlepszy! w dodatku jest jest to muffinowa wersja mojej ulubionej tarty (mozecie znalezc przepis tutaj).  


to make these lovely muffins (that evrybody will love - believe me, it's tested on my family!) you will need:

per fare questi buonissimi muffin (che piaceranno a tutti - credetemi e' testato sulla mia famiglia!) vi servira':

zeby zrobic te pyszne muffiny (ktore beda wszystkim smakowac - wierzcie mi, przetestowalam na rodzinie) bedziecie potrzebowac:

- 180 g (6,3 oz.) of flour, di farina, maki
- 3 eggs, uova, jajka
- 100 ml (a bit less than half cup) of milk, di latte, mleka
- 100 ml (a bit less than half cup) of vegetal oil, di olio vegetale, oleju roslinnego
- 100 g (3,5 oz.) of gruyere cheese or similar, di formaggio gruyere o simile, sera gruyere lub podobnego zoltego
- 200 g (7 oz.) of fresh spinach leaves, spinaci in foglie, swierzego szpinaku w lisciach
- 100 g (3,5 oz.) of feta cheese
- 2 tablespoons of baking soda, cucchiai di lievito, lyzki sody oczyszczonej
- salt and pepper, sale e pepe, sol i pieprz
- pine nuts (optional), pinoli (optional), orzeszki piniowe (jesli chcecie)

preheat the oven to 180°C (350°F). boil spinach leaves in salted water for a couple of minutes. cut feta cheese in small pieces. mix the eggs with milk and oil. grate gruyere cheese (i actually used emmentaler) and add it to the mixture. add flour, spinach and feta. mix well. at the end add the baking soda, salt and pepper and mix again. put the mixure in well buttered muffin pans. sprinkle with pine nuts. bake for about 20-25 minutes. serve cold!

riscaldare il forno a 180°C (350°F). far bollire gli spinaci nell'acqua salata per ca. 2 minuti. tagliare feta a cubetti. mescolare le uova con il latte e l'olio. grattugiare il gruyere (io in realtà ho usato emmentaler) e aggiungerlo all'impasto. aggingere gli spinaci e la feta. mescolare bene. alla fine aggiungere il lievito, sale e pepe, e mescolare per l'ultima volta. trasferire l'impasto negli stampi da muffin ben-imburrati. cospargere con pinoli. cuocere per ca. 20-25 minuti. servite freddi!

rozgrzac piec do 180°C (350°F). sparzyc szpinak w osolonej wodzie przez ok. 2 minuty. pokroic fete na kawalki. wymieszac jajka z mlekiem i olejem. zetrzec ser (ja uzylam emmentalera) i dodac do masy. dodac make, szpinak i fete. dobrze wymieszac. na koncu dodac sode, sol i pieprz, i wymieszac po raz ostatni. wlac mase do wysmarowanych maslem foremek di muffinow. posypac orzeszkami piniowymi. piec przez ok. 20-25 minut. najlepszy sposob degustacji: na zimo!
