parmigiana



my dear friends, i wasn't in the mood for posting recently due to the national mourning in poland, so please forgive me this absence. however, life goes on and i'm back with a new post. hope you will enjoy :)

if you are on diet please don't read this post (and don't watch the pictures :). but if you are not, or you simply prefer good food on dull diets just keep on reading! this is a real italian parmigiana recipe that i learned from my mother-in-law. my favourite dish!

se siete a dieta non leggete questo post (e non guardate le foto :). ma se non siete a dieta o semplicemnete preferite buon mangiare alle noiose diete andate avanti! questa è una vera parmigiana italiana che ho imparato dalla mia suocera. il mio piatto preferito!

drodzy przyjaciele, ostatnio nie bylam za bardzo w nastroju do pisania w zwiazku z zaloba narodowa w polsce. wybaczcie mi ta nieobecnosc. w kazdym badz razie zycie toczy sie dalej wiec pojawiam sie z nowym postem. mam nadzieje, ze wam sie spodoba :) 

jesli jestescie na diecie nie czytajcie tego postu (i nie ogladajcie zdjec :). ale jesli nie jestescie na diecie lub najzwyczajniej wolicie dobre jedzenie od nudnych diet mozecie czytac dalej! to jest prawdziwa wloska parmigiana, ktorej sie nauczylam od mojej tesciowej. moje ulubione danie!


you will need, vi servirà, bedziecie potrzebowac:

- 4 big aubergines, grandi melanzane, duze baklazany
- 1/3 cup grated parmigiano o grana padano, bicchiere di grana o parmigiano grattugiato, szklanki tartego parmezanu lub grany 
- 2 eggs, uova, jajka
- 1/2 cup of flour, bicchiere di farina, szklanki maki
- 2 cups of home made (or not :) tomato sauce, bicchieri di sugo di pomodoro fatto in casa (oppure no :), szklanki sosu pomidorowego domowej roboty (lub nie :)
- salt, sale, sol
- olive oil, olio d'oliva, oliwa z oliwek  

preheat the oven to 180°C (360°F). wash the aubergines and cut them in slices. beat the eggs and heat the olive oil with some salt in a pan. put each slice of aubergine in the flour firts and then in the egg mixture. fry immediately. grease the baking pan with some oil and spread on the bottom some tomato sauce. put the first layer of aubergines, sprinkle generously with parmigiano and cover with some tomato sauce. make more layers in the same way. bake for 15-20 minutes. probably the best way of serving parmigiana is when it's hot, but let me tell you something: i think that cold is even better, especially in summer!

scaldate il forno a 180°C (360°F). lavate le melanzane e tagliatele a fette. sbattete le uova e scaldate l'olio con un po' di sale in padella. mettete ciascuna fetta di melanzane nella farina e poi nell'uovo e friggete subito. ungete la teglia con un po di olio e mettete un po' di sugo di pomodoro sul fondo. fate il primo strato di melanzane, cospargete generosamente di parmigiano e coprite con un po' di sugo di pomodoro. fate più strati nello stesso modo. mettete nel forno per 15-20 minuti. probabilmente il modo migliore di mangiare la parmigiana è quando è calda, ma io credo che fredda è ancora più buona, sprattutto d'estate!

rozgrzejcie piec do 180°C (360°F). umjcie baklazany i pokrojcie je na plastry. rozbijcie jaka i rozgrzejcie olej na patelni z odrobina soli. wlozcie kazdy plaster baklazana do maki a potem do jajka i od razu usmarzcie . posmarujcie brytwanne odrobina oliwy i polozcie na dnie troche sosu pomidorowego. ulozcie pierwsza warstwe z baklazanow, posypcie spora iloscia parmezanu i przykryjcie sosem pomidorowym. ulozcie wiecej warstw w ten sam sposob. wlozcie do pieca na 15-20 minut. prawdopodobnie najlepszy sposob jedzenia parmigiany jest na cieplo, ale ja najbardziej lubie ja zimna, zwlaszcza latem!

quello che è successo è terribilmente triste anche per noi italiani, è in effetti una gravissima perdita, sotto ogni punto di vista.
Ma ad ogni modo, la tua parmigiana di melanzane è bellissima e buonissima,un vero successo!

Mi dispiace molto per ciò che è accaduto in Polonia!!!
Adoro la parmigiana io la faccio anche con le zucchine se non l'hai ancora assaggiata provala, il procedimento è lo stesso!!!!

My deepest condolences for and the Polish peoples loss. It so sad and such a tragedy that so many lives were lost. So many people will be missed.
