what can you do with a handful of raspberries?




i remember from my childhood that in july to get some fresh (and divine!) raspberries it was just enough to cross the path in front of our house. well, it is still possible but not fo me :( now to get some good quality fresh raspberries sometimes i really need to search for them... in any case, although some difficulties, rasperries are still my absolute favourites fruits! maybe it's because my lovely granny used to garnish my birthday cake with raspberries every year :)

mi ricordo dalla mia infanzia che per avere un po' di lamponi freschi (e divini!) bastava attraversare la stradina di fronte alla casa. in realtà questo è ancora possibile ma non per me :( adesso per trovare un po' di lamponi freschi e di buona qualità a volte devo davvero cercarli a lungo... in ogni caso, nonostante le difficoltà, i lamponi sono sempre i miei frutti assolutamente preferiti! forse perchè la mia carissima nonna decorava la mia torta di compleanno ogni anno proprio con i lamponi :)

pamietam z mojego dziecinstwa, zeby zdobyc garsc swiezych (i bosko smakujacych) malin, wystarczalo przesc na druga strone drozki przed domem. tak naprawde nadal jest to mozliwe, ale nie dla mnie :( teraz zeby dostac swieze i dobrej jakosci maliny, czasami musze sie naprawde naszukac... w kazdym badz razie, pomimo trudnosci, maliny pozostaly moimi najukochanszymi owowcami! moze to dlatego, ze moja kochana babunia ozdabiala wlasnie malinami moj tort urodzinowy kazdego roku :) 




the proposal for today is this delicious raspberry semifreddo, a good alternative to ice cream (much easier to prepare!) for these hot summer days.

la proposta per oggi è questo delizioso semifreddo, una buona alternativa al solito gelato (molto più facile da preparare!) per queste caldi giornate estive.

propozycja na dzisiaj to to przepyszne semifreddo malinowe jako dobra alternatywa na lody (o wiele latwiejsza do przygotowania!) w te gorace letnie dni.

you will need, vi servirà, bedziecie potrzebowac (4 portions):

- 250g (8,8 oz.) of fresh raspberries, di lamponi freschi, swiezych malin
- 250 ml (1 cup) of fresh cream, di panna fresca, swierzej smietany
- 4 tablespoons of icing sugar
- 2 gelatine leafs (ca. 12g./ 0,4oz.), fogli di gelatina, zelatyny w listkach 

put gelatine leafs in cold water until they become soft, squezze well and melt in a water bath. wash raspberries, add 2 tablespoons of icing sugar and blend them. add meleted gelatine and mix very carefully. place in the fridge for few minutes. whip up the cream with remaining sugar. mix wery gently cream and raspberries and pour the mixture in well greased bowls or molds (i used individual creme caramel molds). cover with cling film and refigerate for at least 2 hours (the best would be overnight). serve cool.

mettete i fogli di gelatina nell'acqua fredda per ammorbidirli. strizzate bene e sciogliete a bagnomaria. lavate i lamponi, aggiungete 2 cucchiai di zucchero a velo e frullate tutto. agiungete la gelatina sciolta e mesolate molto bene. mettete in frigo per qualche minuto. montate la panna con lo zucchero rimanente. unite molto delicatamente i lamponi alla panna e versate nelle scoldelle imburrate o nei stampi (io ho usato quelli per creme caramel). coprite di pellicola e mettete nel frigo per almeno 2 ore (meglio se per tutta la notte). servite freddi.

namoczcie listki zelatyny w zimnej wodzie az zupelnie zmiekna. wycisnijcie dokladnie i rozpuscie zelatyne w kapieli wodnej. umyjcie maliny i zmiksujcie z dwoma lyzkami cukru pudru. dodajcie rozpuszczona zelatyne i bardzo dokladnie wymieszajcie. wlozcie do lodowki na kilka minut. ubijcie smietane z pozostalym cukrem. wymieszajcie bardzo delikanie smietane z malinami i przelejcie do miseczek lub foremek (ja uzylam pojedynczych do creme caramel). nakryjcie folia i wlozcie do lodowki na conajmniej 2 godziny (najlepiej na cala noc). serwujcie zimne.

   

and if you want a real semifreddo cake (like the one in the picture below - i made it last saturday for my husband's birthday!) use double porttion of the ingredients and a regular cake pan :)

My son adores raspberries. He can eat a pint all by himself. I've never made this semi-freddo. It looks completely delicious. I'd love to try making some. Maybe I can pick up some raspberries at the farmers market this weekend. The cake is beautiful as well. ;)
