quick ideas - aubergine and buche de chevre from the oven


my life speeded up with a new job and recently my cooking is rather quick and no so much elaborated, but i've always loved food that is simple and easy to prepare. moreover in this stressful period it's nice to get some "comfort food" and for me buche de chevre (and any kind of goat cheese) is comfort food par excellence! the marriage between aubergine and goat cheese is excellent too, especially when you are hungry :)

la mia vita ha accelerato con il nuovo lavoro e ultimamente cucino di fretta senza fare cose troppo elaborate, ma ho sempre amato il cibo semplice e facile da preparare. poi, in questo periodo stressante, è bello ricorrere al cibo che ti sa consolare e per me il buche de chevre (e ogni tipo di formaggio di capra) è consolante e come! il matrimonio tra la melanzana e il formaggio di capra è perfetto, soprattutto se hai fame :)

moje zycie przyspieszylo odkad zmienilam prace i ostatnio gotuje na szybko i niezbyt wyszukanie, ale zawsze lubilam proste i latwe do przygotowania jedzenie. ponadto w tym stresujacym okresie dobrze jest siegnac po cos "pocieszajacego" a dla mnie buche de chevre (tak jak kazdy kozi ser) jest bardzo pocieszajacy! malzenstwo baklazana z kozim serem jest bardzo udane, zwlaszca kiedy jest sie glodnym :)   



you will need, vi servirà, bedziecie potrzebowac (for 4):

- 16 slices of aubergine, fette di melanzana, plastrow baklazana
- 8 slices of buche de chevre (or other goat cheese), fette di buche de chevre (o di altro formaggio di capra), plastrow buche de chevre (lub innego koziego sera)
- 8 small tomatoes (or 8 slices of regular tomato), pomodorini (oppure 8 fette di pomodoro), malych pomidorkow (lub 8 plastrow pomidora)
- olive oil, salt and peper; olio di oliva, sale e pepe; oliwa z oliwek, sol i pieprz
- fresh mint leaves and balsamic vinegar to garnish, fogliette di menta fresca e aceto balsamico per guarnire, listki swiezej miety i ocet balsamiczny do przystrojenia

grill aubergine slices (5 minutes for each side) on a frying pan. place half of aubergines on a slightly greased pan, cover each slice with buche de chevre and with the second slice of aubergine. at the end add slices of tomatoes, salt and peper. bake for 15-20 minutes at 180°C (360°F). serve hot with mint leaves and some drops of balsamic vinegar.

grigliate le fette di melanzana (5 minuti per ogni lato) in una padella. mettete la metà delle fette su una teglia leggermente unta, coprite con una fetta di buche de chevre e poi con la seconda fetta di melanzana. alla fine metteteci sopra i pezzettini di pomodorino, sale e pepe. mettete al forno per 15-20 minuti a 180°C (360°F). servite caldi con fogliette di menta e qualche goccia di aceto balsamico.

podpieczcie plastry baklazana na patelni (5 minut z kazdej strony). polozcie polowe plastrow na lekko potluszczonej blasze, nakryjcie plastrem buche de chevre i drugim plastrem baklazana. na koniec nakryjcie plastrem pomidora, dodajcie sol i pieprz. pieczcie przez 15-20 minut w temperaturze 180°C (360°F). podajcie gorace przystrojone listkami miety i kilkoma kroplami octu balsamicznego.

Uwielbiam goat cheese. Czy uzywasz do tego przepisu miekkiego sera koziego (twarogowego) czy takiego ze skorka jak Camembert?
Powoli przekonuje sie do baklazana (aquired taste for me), to moze z kozim serem sprobuje.
